Cranberry Christmas Delights
These bite size cookies appear every Christmas on Dostie's three tired cookie plate. Their little red gem's going well with the Holiday decor and the camellias, which are at full bloom this time of year. The original recipe came from the Atlanta Cooks for Company cookbook (1968 edition). Dostie's vintage copy is stuffed with old newspaper clippings of luncheons and recipes from a past era. We modified it with a few dried cranberries, and believe it or not, a little less sugar. I hope you all enjoy these lovely little bites, and have a very Merry Christmas!!!
Prep Time: 10min./ Bake Time: 15-20/ Makes 35-40 cookies
- 1 c. butter (soft)
- 1/2 tsp. salt
- 1/2 c. confectioners sugar (sifted)
- 1 Tbl. vanilla
- 2 c. cake flour (sifted)
- 1c. pecans (chopped)
- 1/2 c. dried cranberries (approx.)
Blend softened butter, salt, sugar, and vanilla. Sift in flour and add pecans. Chill 10-15 min. in the frig. Then shape dough into rounded teaspoon size balls. Place onto cookie sheet. Press cranberries into the center of each cookie ball. Bake at 300º 15-20 min. Remove and brush on glaze immediately, while warm.
- 1/2 c. confectioners sugar
- 2 tsp. milk
- 1/2 tsp. vanilla
*can be stored in a cookie tin for at least a week.
